The daiquiri is the sleeping giant of our Bamboo Room menu. Concocted simply with fresh lime juice and Martinique sirop de canne, we serve it in the Traditional Style - shaken and served up or over shaved block ice made from cold-pressed pineapple juice.

Tiki Classics

Here we honor legendary tiki cocktails and the bartenders who created them. Liberties have been taken in proportion, technique and rum styles to showcase these cocktails in what we consider their best form.

The origin of the Mai Tai is highly debated, as it's most commonly attributed to Trader Vic, circa 1944. This iteration is in the style of the original with one notable exception: the high-test rum float. To honor the rich history of the Mai Tai, each is served in a vintage mug from shuttered historic tiki bars around the country. mai tai served in brown mug with flower and herb garnishes

The popularity of this early Don the Beachcomber cocktail meant it was often copied by the competition. This Zombie is presented in the style of Don’s 1934 Zombie. some liberties have been taken with the rum blend. Cocktail served in tall tiki totem style mug with lotus flower garnish

The Missionary’s Downfall was created by Don The Beachcomber in the late 1930s. Jeff Beachbum Berry describes this cocktail as “70 years ahead of its time," and we couldn’t agree more. The addition of a green Chartreuse float is not traditional but is a recommended addition. Cocktail served in a pineapple with lotus flower garnishes. Served on a stand filled with ice and dragonfruit.

This spectacle of a cocktail was originally created by Don The Beachcomber in 1937, however we have modeled this version after the Kona Coffee Grog as served at the legendary Mai Kai in Fort Lauderdale. Flaming rum being poured out of a pot over a slow drip coffee.
